As some of my followers know, in addition to baking, blogging and decorating, I am also a middle school teacher. So the summer months are quite lazy for me ( Don’t judge). Between Vacations, catching up on sleep and also the normal August ramp up for the school year, I sometimes don”t get to bake as much as I want. But here are some Yummy things i cooked up this summer!
A wedding is an important occasion, so when I was asked months ago to make Tiffany Box styled cupcakes for Tiffany ( cute right), I was thrilled. My very first wedding. So as the day drew closer the anxiety built. More and more, brides are turning to cupcakes for weddings as a more cost effective option to cakes. No worries about slicing and serving sizes one cupcake per person and the Bride gets the cake!
My client wanted a lot of cupcakes so my first task was to find a way to display them all! Hours of searching online led me to two options. Build my own stand using these instructions or purchase a stand. Now when it comes to building things I have no fear but, power tools, the Baked Scientist knows those are far way from my kitchen aid mixer and heavily used glue gun! So I purchased one from The Cup Cake Tree. These are nice and reusable as long as you do not put a lot of weight on them.
The cake was red velvet with cream cheese frosting. The cupcakes were plain and red velvet. This frosting is to die for and by far the best cream cheese frosting I have ever made!
Tips from the Scientist: Baking a lot of cupcakes? I make the decorations 2 days before the event, bake the cupcakes and make all the frosting the day before the event and and have a frosting field day the day of so everything looks fresh!
Well, personally I think we all have a lil party animal inside us! I made some cupcakes and chocolate covered items for this themed party. Treats tables are getting very popular as a way to accessorize cakes. Even though I didn’t make this cake those are my strawberry shortcake cupcakes.
Tips from the Scientist: Anything can be a container. I like to keep an eye out at the dollar and craft stores for things on sale. These buckets were a dollar at Michaels and will some ribbon added they are so very cute! I have used plastic cups, glass jars, even colored plates to add some personalization to any table decor.
Dont you just love babies? One of my best friends asked me to make her shower cake. I love this cake and man did it taste good! The vanilla bean cake recipe was soooo good my friend froze pieces of it so that she could slowly savor its yumminess. ( Hey look I would have just ate it as fast as I could but thats her way)
The one thing that was against me with this cake was time. I had a very busy week and just didn’t get to put time into the details the way I wanted to. I also made cupcakes and those cute button lollipops.
Tip from the Scientist: SLEEP is required for intricate work, or at least for me. So time your confection creations accordingly!
After what felt like an eternity orders began to come in and it got very busy very fast in the second month of the year.
This was a very fun cake to make. I feel like I have done enough zebra prints for it to be easy for me to do, but they wanted a gift box. Bows I do not normally do and to be honest this one was a pain, I had to be just right! It took a long time to put together because placement was important. I used the rhinestones and the balls to add a little more sparkle!Finished it off with some pearl spray.
My little brother Mikey turned 13! he is a TEEN His favorite things to do are annoy his sisters, play soccer and he likes airsoft and paintball. The last two require some camouflage so I had to make him this camo cake. He wanted all his favorite things on it. Chocolate doughnuts, Oreos ( I crushed for dirt) and KitKats which I used for the M Mikey hates fondant so I spent quite a bit of time researching how to get this effect with butter cream. THE VIVA PAPER TOWEL METHOD is the trick. I think it came out pretty great for my first time.
These are starting to become some of my favorite things. Assorted variety of delicious treats in small quantities with candy and other yummy things on a table equals TREAT TABLE. I plan on doing a post soon on Treat table 101 but until then the pictures will have to do. The cupcakes were my favorite!

In my attempt to play catch on my blog I am posting what I have done since Dec 2012 to NOW by Month!
Why did I start blogging… to keep track of my creations and also keep track of my favorite recipes. Some how I have not done either, the worst part is when I find a great recipe online and because I didn’t book mark it, print it or blog it, its gone! SO I AM GETTING BACK ON THE BLOGGIN’ WAGON! I want to look back at this in 5 years and see all the great things I have done.
In the past 5 months I have learned lots of new things so old followers and new you have much to look forward to…
This weekend I made a wonderful almond cake in the shape of a 60! It is so wonderful when you get a referral client. I made this cake for a person that attended, the Movie Cake party, the Tre Chic Party AND the Jungle Junction party. That just warms my heart that she though of me to make the cake for her fathers 60th Birthday! Feeling very blessed!
I recently came to the realization that I started doing this in April 2012. I started taking the wilton classes in January finished the 4th course in april and here I am 9 months later!!! Just amazing it almost seems unreal!
Anyways back to the cake! This recipe was to die for. I have always just added almond flavor to my vanilla cake recipe and voila Almond cake. I thought I would really try something different this time around. I found this great Almond Pound cake recipe from Paula Deen. If you are looking for an almond cake please try this recipe! On a side note my room mate and boyfriend ate all the cake scraps after carving with left over buttercream!
After baking I got to carving (see here for my post on how to do this). This time it was much easier that the Movie cake because I had a bit more experience (always bodes well) . That took about an hour to get all the pieces cut and frosted and assembled on the board. Then I covered in fondant and decorated it.
I used gold spray to give a air brushed affect across the top and cut out some stars in black as accents. My client wanted little messages on the cake about her dad. I made those with fondant and painted the blue onto the ribbon for more of gloss effect and used edible markers for the other text.
For the message on the front my client loved the letters in the Jungle Junction cake so I melted down some chocolate and made the letters using one of the Plastic molds I like. I HAND PAINTED every one of them gold with edible luster dust. That took an hour because I had to make sure every spot was colored. Trust me I wished often why no one has invented golden and sparkly chocolate, or I just have not come across it yet. I laid a thin strip of fondant down and placed the letters across the front of cake. Then I was finally done.
